0 Birthday Boy Dinner

We celebrated Nick's 26th Birthday yesterday.
And we gained 5 lbs. 

Cyndi Rolls
(makes 2 dozen rolls)

3 1/2 c. flour
2 1/2 tsp. yeast
1 1/4 c. milk
1/4 c. sugar
1/4 c. shortening
1 tsp. salt
1 egg

In mixing bowl, combine 1 1/2 cups of the flour and the yeast. Heat milk, sugar, shortening, and the salt just till warm, stirring constantly until the shortening almost melts. Add to dry mixture; add egg. Beat at low speed of electric mixer for 1/2 minute, then beat 3 minutes at high speed. By hand, stir in remaining flour to make a soft dough. Shape into ball.

Place in lightly greased bowl; turn once to grease surface. Cover; let rise in warm place till double, 1 1/2 to 2 hours. Punch down; turn out on floured surface. Cover; let rest 10 minutes. Shape into desired rolls. Cover; let rise in warm place till double, 30 to 45 minutes. Bake on greased baking sheets at 400 degrees for 8-10 minutes. 

Texas Roadhouse Cinnamon Honey Butter

1/2 c. butter
1/2 c. honey
1/2 c. confectioners sugar
1 tsp. cinnamon

Mix together.

1 Friday Day Long Date

Do you like surprises? Me and surprises have a love/hate relationship.
I love surprises, but hate waiting for them. 
So if you're going to surprise me, don't tell me unless you're going to show me right away. 
(Otherwise I end up talking you into telling me)

That being said, Nick surprised me on our the way to Lagoon....with our new home!!



Did I fool you? I wish this was our new home. 
The open house starts July 29th, so we weren't able to go in, but isn't that the cutest little house!

Our day got even better when we stopped at Chipotle for lunch.


It's a good thing Chipotle is so far away. Otherwise I would eat this a lot more.

And of course we were having way too much fun to take any pictures at Lagoon, but here are some of our favorite rides

It spins 3 different ways. Nick didn't like this one much.

After only spending about 5 hours at Lagoon we realized that we are not as young as we once were. We had a blast, but we were worn out and hurting from the screaming, sun, and whiplash. But definitely worth it. 

To end the day long date we went to The Pie Pizzeria in Salt Lake.


It was a fun underground pizza joint. And the pizza was good. 

My family left today and they will be missed! (Especially the free babysitting).

0 Happy Fourth!

Most of our celebrating was on Saturday since Nick has to work today.
We spent the day watching hot air balloons, going to the Farmers Market, tubing, shopping, and watching fireworks. 
I'd say it was a pretty eventful day!

2 My thoughts on Marriage.

I'd rather spend our money on expensive, romantic dates than pay for marriage counseling.
(I am in no way saying that Nick and I need marriage counseling, I'm just saying that I'd rather put more effort into keeping our marriage fun and exciting now, then paying for it later if we don't).

This is why I don't feel bad about next Friday's date.
A little more on the expensive side and a little less on the romantic side, but I'm pretty excited. 

And I'm getting ready for the funnest month of the summer, July! Why you ask? 
Because it's Nick's Birthday Month!

1 Motivating Entertainment


Soul Surfer

This is the best movie I have seen in a long time. I remember hearing about this girl's story when I was younger, and I'm so glad they made a movie about her. It's stories like hers that make you want to be better and to make a difference. It is an uplifting family film that teaches you about compassion, strength, and God. This is going on my top 5 movie list. And if you do go see it, bring tissues. Believe me, you'll need them.



I can't decide if I love or hate this book. Probably both. 
It is a heart wrenching story of two boys that grew up together in Afghanistan. It is an eye opener into the lifestyle and treatment of Afghanistan citizens when the Taliban came in and took over. The story has a lot of drama and it doesn't exactly end happy either. But It makes you realize how blessed you are. It makes you want to do something. It makes you want to contribute, to serve, to pray for people that are in awful situations and can't do anything about it. 
(Warning: The book does have some language and graphic material).

I'll be reading A Thousand Splendid Suns next. 

I'd love to hear any recommendations of feel good movies/books.
