0 3 Years and Counting

Day 6

My husband and I have been dating for 3 years today. We went on our first date 3 years ago to this same place. Although it was Gelato back then. And last year it was a philly cheese steak place. This year it is a deli place. It's fun to think of what it will be next year. I'm kind of hoping for Mexican or Chinese. 

And as a side note, can you believe the snow outside today?! I'm not liking this jump from summer to winter, but I won't complain because it means I can finally wear my boots.

0 Star Gazing

Day 5

Since my family is here we like to take advantage of the free babysitting. I took Nick on a surprise date when he got home from work. He drove, but I told him to go left or right. He had no idea where we were going and the best part is it was free. We went up the canyon with a bunch of snugly blankets and went star gazing. We did this when we were dating and it was so fun to play remember when and just to take a break from the everyday routine. And no, I did not wear this outfit star gazing. I wore my pajamas.

1 Red

Red is one of my favorite colors. It's bold and beautiful. That's why I fell in love with this skirt, especially for only 4 dollars. I was going to cut it shorter, but I'm loving the long skirts these days. Especially with the little bug running around so much. I just wish I was brave enough to wear red lipstick...maybe one day.

2 Top Knots and Thai Mango

Everybody in Provo needs to try Thai Mango. Nick and I went there yesterday for lunch. We got the Massaman Curry and Pad Thai. The massaman curry was to die for. Whoever thought peanut butter and coconut could go so well together. And as for the hair, I'm kind of loving the I just rolled out of bed and did my hair in 2 seconds look. Happy Friday!

0 Fashion & Food

From being pregnant, to having a spit up baby, and nursing I don't always feel the most fashionable. And not to mention that we tend to stay in all day so what's the point? I found that cardigans are a definite stable in my closet. They are baby friendly and easy to change when I get spit up all over me. 

My weekend was filled with basil. Mmmm.

Tomato Basil Soup with Grilled Cheese


4 tomatoes cut-peeled, cut, and seeded
4 cups tomato juice
14 basil leaves
1 cup heavy whipping cream
1/2 cup butter
salt and pepper to taste
Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot. 
Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.
(I'm hoping everyone knows how to make a grilled cheese sandwich)

Sun dried Tomato and Basil Pizza


Pizza Crust:
2/3 cup water (11O°F to 115°F)
1 teaspoon sugar
1/8 ounce package fast rise yeast or 1/8 ounce package active dry yeast
1 3/4 cups all-purpose flour or 1 3/4 cups bread flour
1/2 teaspoon salt
1 tablespoon cornmeal (optional)
Combine water and sugar in small bowl; stir to dissolve sugar.
Sprinkle yeast on top; stir to combine
Let stand 5 to 10 minutes or until foamy.
Combine flour and salt in medium bowl.
Stir in yeast mixture.
Mix until mixture forms soft dough.
Remove dough to lightly floured surface.
Knead 5 minutes or until dough is smooth and elastic, adding additional flour, 1 tablespoon at a time, as needed.
Place dough in medium bowl coated with nonstick cooking spray.
Turn dough in bowl so top is coated with cooking spray; cover with towel or plastic wrap.
Let rise in warm place 30 minutes or until doubled in bulk.
Punch dough down; place on lightly floured surface and knead about 2 minutes or until smooth.
Pat dough into flat disc about 7 inches in diameter.
Let rest 2 to 3 minutes.
Pat and gently stretch dough from edges until dough seems to not stretch anymore.
Let rest 2 to 3 minutes.
Continue patting and stretching until dough is 12 to 14 inches in diameter.
Spray 12- to 14-inch pizza pan with nonstick spray; sprinkle with commeal, if desired.
Press dough into pan.
Preheat oven to 5OOF.
I cook the pizza crust first until it's a little golden on the edges.


Then add spaghetti sauce with slices of mozzarella, sundried tomatoes and cook until cheese is melted.  Top with fresh basil and enjoy!

Tomato Basil Bow tie Pasta



Bow tie pasta
Basil
Stewed Tomatoes
Onions
Mozzarella

I pretty much just threw everything together in this one. Cook the pasta and saute onions and put in tomatoes and mozzarella cheese. Add basil when you're ready to serve.  

Whew! Talk about delicious. I love trying new recipes. Especially vegetarian ones! These were all quick, simple, fresh, and delish.

I recently lost about 15 pounds and am less than I was when I got married, hurray! It's such a good feeling to be healthy and some what back in shape. So because of this I have been wanting to update my wardrobe. And lately I have been finding some awesome deals.  (My husband is thrilled).

Cardigan: Forever 21 ($18)
Jeans: Aeropostale ($25)
Boots: Forever 21 ($35)
Belt: Husbands (Free!)

I ordered the cardigan and boots on Forever 21's website because going into that store gives me a headache and stresses me out (I don't do well with lots of options).  The delivery was so fast and it made my day getting a package in a mail!

I also found the most fabulous skirt at Ross to later find out that it had pockets as well.  Happiest day.  I love skirts with pockets.  And a fun spring shirt at Kohls today.  (I'll post pictures soon)
