1 Meatless Monday: Broccoli Pasta

Combine two 14 ounce cans of chicken broth, 1 teaspoon lemon zest, and 1/8 teaspoon pepper.  Bring to boil. 
Add 3 cups broccoli and 6 ounces of Angel hair pasta. 
Return to boil for 3-4 minutes, stirring often. 
Add ½ to ¾ c. nonfat sour cream. 
Remove from heat and let sit 5 minutes. 
Add 2 tablespoons of Parmesan cheese. 

My mother in law gave me this recipe and I love it! It is super easy to make and healthy. I'm usually not a big broccoli eater, but this recipe makes broccoli taste good. Even Kenzie loves it. And if you don't want to eat it vegetarian style you can add ham and it tastes just as good.

6 I Have a Full Time Job

I crocheted about 40 hours this week and made Kenzie this blanket. So yes, I have a full time job of crocheting. Except for the getting paid part. I put a hold on my other crochet blanket to make some of these baby blankets. I'm making one for my friend Brooke. And if you are having a baby girl this year and I really, really, really like you you will probably get one of these too.

It took about 9 skeins of yarn, 5 trips to the craft store (to use coupons each time), 35 dollars, and 40 hours of love to make this project happen. I'm in love with how it turned out. Although my wrist has some complaints, I think it was a fairly easy project just very time consuming. I owe our late nights of 24 for allowing me to finish this project and plow through the tediousness of it!

2 Top Knots and Thai Mango

Everybody in Provo needs to try Thai Mango. Nick and I went there yesterday for lunch. We got the Massaman Curry and Pad Thai. The massaman curry was to die for. Whoever thought peanut butter and coconut could go so well together. And as for the hair, I'm kind of loving the I just rolled out of bed and did my hair in 2 seconds look. Happy Friday!

0 Labor Day Weekend

Found a bunch of books for $2.
 Found some fun projects to add to my very large pile of projects.
Watched the first Season of 24. We're obsessed.
While eating a bunch of these.
While Crocheting about 10 hours a day (I'm not joking)
Walked around Bridal Veil Falls.
And played with this cute little munchkin.

0 Meatless Monday: Eggplant Parmesan (and Happy Labor Day!)


  • 3 eggplant, peeled and thinly sliced
  • 2 eggs, beaten
  • 4 cups Italian seasoned bread crumbs
  • 6 cups spaghetti sauce, divided
  • 1 (16 ounce) package mozzarella cheese, shredded and divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1/2 teaspoon dried basil

Preheat oven to 350 degrees F (175 degrees C). Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes, or until golden brown.

My Review

I liked this. Not love, but liked. I think I'm getting sick of vegetables. I need to find more bean based vegetarian dishes. I added noodles to this dish so it would be more filling. I don't think I'll be making this again, but I'm glad that I tried it. It just doesn't compare to Chicken Parmesan. Mmmm.

1 I Feel Silly

I have been wanting to do more outfit posts lately, but I feel silly. I don't get ready most days and let's face it I'm lucky to even get a shower in the morning with Kenzie being so clingy. So on days that I do get ready (Sundays) I make Nick take my picture so I can document that I actually can look cute. Do all moms feel this way? I feel like most days it's pointless to get ready because we just are home all day or playing at the park. I use to love to get all dressed up for school and dates, and now the only excuse to get all dressed up is to go to the grocery store...

So I am going to be doing some outfit posts here and there and I would love some feedback, because being a stay at home mom I'm kind of out of the loop. I am mostly just excited for boot weather! Is 70 to hot to wear boots?
